Can a customer leave a bottle with the shop and come back for it?

Yes. A customer who does not finish a bottle can leave it with the shop, and the system keeps track of whose it is and how much is left — no marker pen on the label, no argument three weeks later about how full it was.

That is the whole feature, and it earns its keep at the bar: a bottle of whisky is not finished in one sitting, and neither the customer nor the counter wants to guess. The sale is recorded when the bottle opens; the hold is recorded when it leaves; and when the customer comes back, the claim is made against the record rather than against a cork and a hope.

The records sit with the rest of the customer’s account, so a claim and a history of what is being held read the same way a bill does. It is a small thing done properly, which is the difference between a regular who trusts the house and one who takes the bottle home next time.
